![]() The only thing that I could really taste was the salt from the bacon, which, it’s very hard to make bacon not taste good. Although I could see the “bitchy sauce” smeared across the sandwich from its red color, I could not taste it. The rest of the sandwich was lack luster as well. Since I had just done my Louisiana gas station food research trip the month before, I can say with confidence that the Biscuit Bitch biscuit tasted like a below average gas station biscuit. My guess is it is mainly made with shortening as it had little flavor let alone butter flavor. While I am not opposed to choosing efficiency over aestheics (square vs circle), the irregular shape of the biscuit made it look rushed and messy. The biscuit was flat and square as if it were rolled out and cut with a knife as opposed to a traditional circular cutter. The grits were perfectly pleasant as anything is with butter and cheese on top, but the main even, the bitching biscuit, was a let down. I ordered a Bitchwich sandwich (a bacon, egg and cheese biscuit sandwich) with a side of cheesy grits. With the cashier handing them over and yelling “THANKS, BITCH”, we found a spot to eat and dug into our food. Being that this was just a walk up window with enough people around that the four tables were constantly filled, our only choice was to stand and wait.įinally our order was ready. We ended waiting around an hour and twenty minutes for our food. After the fact, we realized we should have ordered our food while we were still at our airbnb, arriving only when our food was close to ready, however, it was not clear ahead of time this was their ordering system. There are a few outside tables set up, but not a sit down restaurant by any means. The Belltown location is an online order/walk up location only. This ended up being a fruitless attempt even at Belltown. We decided to NOT go to the one in Pike’s Place mainly to try and avoid an hours long line. Just then a clear scream cuts through the air, “BIIIIIITCH!” We had arrived at Biscuit Bitch.īiscuit Bitch as two locations- Pike’s Place and Belltown. We haven’t spotted it yet, but we see a group of people hovering outside what looks like a residential apartment building so we assume we are close. Our uber dropped us off around the corner, so Tori and I make our way across the street toward where our maps claim the restaurant is. The sun is out and there is a slight, cool, morning breeze. So let me set the scene- it’s Saturday around 10 AM. (If you are new here, I wrote my Master’s thesis on the racism and classism of cornbread and biscuits and to this day still think about them often.) I wanted to find out how Biscuit Bitch used the biscuit to create their restaurant’s brand as well as if their biscuit was any good. Now, I was very excited to visit Biscuit Bitch because I had read about them and ultimately included them in my thesis as an example of biscuits growing in popularity around the country. From Seattle Biscuit Co to Honest Biscuits or Biscuit and Bean, it is very easy to find a biscuit bite in the Emerald City.ĭuring my late August trip to Seattle, my friend Tori and I decided to check out one of the more popular Seattle biscuit spots infamously called Biscuit Bitch. Multiple establishments in Seattle have built their entire premise on the biscuit including their business’s name. ![]() Not even in a covert, underground way where it is a single item on a bakery’s menu.
